1. Vegetarian Quesadilla
This is a very simple, quick, and easy recipe that is excellent to save as a snack or lunch time meal.
What you will need: 1 red pepper, 4 mushrooms, ½ red onion, 1 tablespoon of olive oil, whole wheat tortilla, and 1 cup shredded reduced fat cheese.
How To: Chop up the vegetables and sauté them in a pan. Place a tablespoon of olive oil in another pan and place a tortilla down, slowly add the fillings and sprinkle the cheese on top. Seal with another tortilla on top. Flip after a minute on medium heat.
You can add toppings like sour cream, salsa, and chives.
2. Penne Pasta casserole
What you will need: Whole wheat penne pasta, mushrooms, garlic, mozzarella, spinach, soy sauce, and vegetable oil.
Preheat oven to 350 degrees F. Lightly grease a 9×13 inch baking dish.
Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, and drain.
Heat the oil in a saucepan over medium heat. Stir in the mushrooms, cook 1 minute, and set aside. Melt margarine in the saucepan. Mix in flour, garlic, and basil. Gradually mix in milk until thickened. Stir in 1 cup cheese until melted. Remove saucepan from heat, and mix in cooked pasta, mushrooms, spinach, and soy sauce. Transfer to the prepared baking dish, and top with remaining cheese.
Bake 20 minutes in the preheated oven.
